Frequently asked questions
Our teff is cultivated by skilled farmers using traditional, natural methods in the highlands and central and southern regions of Ethiopia. Seamlessly bringing together modern techniques with time-honoured farming practices, they consistently produce the highest quality teff in the Horn of Africa. We carefully select only the best grains, right at the source.
We have made the conscious choice not to import teff flour directly from Ethiopia, since the long transport distances can compromise its quality and edibility. Instead, we only export whole teff grains, which are perfectly suited to withstand the distance. Our grains are carefully transported by train or truck from Ethiopia to Djibouti, then shipped to Europe. Once they arrive, they are milled freshly at our mills in France, and delivered to you just days after being processed. This approach ensures that their freshness, nutritional value, and authentic teff flavour are perfectly preserved.
We don’t keep the end flour product stock—our teff is freshly milled in France, only when you order. We carefully grind our teff grains on traditional millstones, following the centuries-old traditions of Ethiopia and Eritrea. The result is a silky, wholemeal flour still containing all its valuable nutrients. Perfect for baking authentic, delicious injera flatbread.
